On egg, turkey or lasagna, truffles look good anywhere. Intense and penetrating, sophisticated and with a strong taste, already used in the kitchen by the Etruscans, Romans and Greeks, it has embellished the tables of Caterina de 'Medici, Lucrezia Borgia, Gioacchino Rossini, Alexandre Doumas and many other illustrious characters.
The main element of the mountain culinary tradition of these areas, the Precious White Truffle (Tuber magnatum), found above all in the Bolognese Hills, is one of the most prized varieties of Emilia-Romagna and also represents an important ecological indicator. This underground mushroom, in fact, grows only in non-polluted environments and its Search and Quarrying, performed specifically by the skilled "truffle hunters", turns out to be a sustainable practice in perfect harmony with the ecosystems in which it grows and matures and ensures its biological regeneration. seasonal. Equally precious is, therefore, the practice of the element, officially registered in 2021 in the Representative List of the UNESCO Intangible Cultural Heritage.

The recipe: Egg tagliolini with white truffle

Could you resist a splash of white truffle on a plate of egg noodles? Here is Nonna Angela's recipe.

Ingredients: 350g of egg tagliolini (read here the recipe for making fresh pasta), 80g of butter, Parmigiano Reggiano (try the "Nero di Montagna" variant), White Truffle, Salt for the pasta.

Method: The preparation is very simple but the final result will make you look great by sending your taste buds into ecstasy. Bring the water to a boil and cook the pasta. In the meantime, clean the white truffle with a cloth or a brush to remove residues of the earth and grate a part of it and cut it into strips. Melt the butter in a pan, add the grated truffle, the tagliolini and stir well for a few minutes with a little cooking water. Serve with the Parmesan and truffle cut into strips.
